Best Loaded Potato Soup Recipe




The Ultimate Loaded Potato Soup

What you will need:

2 Cups Water
2 Cups Chicken Stock
3 Chicken Bouillon Cubes
1 Large Carrot - Chopped
8 Large Potato’s Cubed
½ Medium Yellow Onion
¾ Cup Flour
1 Stick Butter
2 Cups Heavy Cream
3 Cups Milk
½ - ¾ lb of Velveeta Cheese
1 Cup Sharp Cheddar Cheese

Garnish (for top of soup)
½ lb of bacon cooked chopped
½ cup Green Onions chopped

Add Chicken Stock, Water, and Chicken Bouillon Cubes to a large pot, and bring to a boil and add Potatoes, Carrots, Onions. Boil until Potato’s are tender. DO NOT DRAIN! ( You want to keep all the water and chicken stock in with your potato’s)

In a separate pot, melt all the butter and add the flour to the butter. Cook the flour and butter mixture for 3-5 minutes making sure to constantly whisk and not to burn. Now add your milk and cream and whisk until smooth.

When it is smooth remove it from the heat and add your Velveeta and Sharp Cheese and stir until combined. When the cheese mixture is smooth and combined add it to your other pot.

Gently stir all the ingredients together, and heat through, add water if it is too thick, salt and pepper to taste.

Serve up in soup bowls and add Chopped Bacon and Green Onions on top!

Enjoy, This is a Great soup and makes enough to feed about 7-8 people, so make sure your family is hungry!
